The Strawberry Hedgehog Cactus Echinocereus engelmannii is one of the most common species of hedgehog cactus in the southwestern US. Its lovely bright fuchsia flowers bloom in spring and are up to three inches in diameter. Flowers close at night and reopen in the morning. The fruit of the Strawberry Hedgehog is edible (if you can reach through the spines) and said to taste like a strawberry.
